Grilled Zucchini with Pine Nuts and Parmesan
This recipe is great on the grill during summer or when you just wish it was summer and grill them over cast iron inside. I'm currently living in the latter scenario! Every bite is filled with fresh flavors; taking you away from your basic zucchini to something more memorable.
Grilled Zucchini with Pine Nuts and Parmesan
Ingredients
3 Tbsp Toasted Pine Nuts
3 Tbsp Olive Oil
2 Cloves Garlic
2 Large Zucchini
1 Cup Basil (Lightly packed)
1 Tbsp Balsamic Vinegar
¼ Cup Parmesan (thick shavings)
Salt and Pepper
In a dry skillet over medium-low heat, toast pine nuts just until they begin to turn golden brown. About 5 minutes. Remove from the heat and set aside.
Cut your zucchini into approximately 1 cm thick disks and lightly salt.
In a small saucepan over low heat, heat the garlic for 15 mins to infuse the oil.
While your garlic cooks, heat your grill pan to medium high and brush on some of the garlic oil into the pan.
Once the pan is hot begin to cook the zucchini for about 3 minutes on each side or until strong grill marks have formed.
Once cooked, plate the zucchini and dress it with 2 tbs of the garlic infused olive oil, balsamic vinegar, basil, parmesan and salt and pepper to taste.
